Food To Wellness (FTW) was created because of the experience I had with my health journey.
Let me explain. I was 40-something and had gotten blood test results back from my doctor that showed pre-diabetes, and high cholesterol (In the 290s) and I was also overweight. This worried me a bit because my father had died of a massive heart attack at age 52 when I was only 12 years old.
I was sent to a diabetic class at the local hospital to get educated about diabetes and I ordered some books on diabetes from Amazon along with some diabetic cookbooks, I was going to hit this head-on.
While on the internet I started reading search results that came up with titles like "Reverse Diabetes with diet" & "Reverse disease with diet and lifestyle changes" I clicked on them, read them, and looked up the cited studies to be sure they were legitimate and not some made up claims.
At some point, I found the movie documentary "Forks Over Knives" I watched it on Netflix and was dumbfounded. This documentary gave me hope and a future of health and it was all documented scientific facts! I could reverse diseases with diet and lifestyle changes, I am not stuck with disease because of my family genes. It destroyed my belief that disease was something that comes with old age and something we just have to deal with, it was all a lie that I had told myself!
This led me to read the book "The China Study" which just cemented everything in my mind, I was convinced I could get healthy. The next few months after that was a continuation of my education about eating healthy and a healthy lifestyle change with more movie documentaries and books.
Then came the day I decided to put this new knowledge into action. My wife and I had decided to start this journey and we started with eliminating red meat from our diet then we eliminated chicken, then all other animal proteins. Dairy and eggs were next. By the end of 6-8 weeks, we had become plant-based.
Three or so months later my next doctor's visit was exciting. I was no longer pre-diabetic and my cholesterol was down to 200. (It's now 158) My doctor told me whatever I was doing to keep doing it, it was working. Of course, I told him what I was doing. A few months later I had lost 30lbs and was down to a healthy weight.
That was in 2012.
Since then, I have received three certificates, one in Gourmet cooking and catering, one in nutrition, and a certification in whole-food plant-based cooking. I plan to continue my education and grow as a chef for years to come.
This journey changed my life so dramatically that I have to share it so I can hopefully help others. I know there is still a huge misconception and ignorance about what is healthy and what is not, fueled by the media, huge food corporations, and suppliers. Money corrupts and that is what has happened in our food & health industries. This is why I provide this website and any services free of charge to anyone who wants it. Here at FTW we are not sponsored or supported by anyone, we don't receive money or donations from anyone or any company.
