Now that you have gotten some education, are committed, and have decided to change your health, I want to congratulate you on your life-changing decision! You're on the road to better health and a happier life!
The first thing you need to do is go talk to your family doctor and tell him or her that you plan to start eating a plant-based diet, this is very important because they may want to change your medication and or keep a closer look on your health as you make this transition. I had a blood test done more often than usual and after a few weeks my medications were lowered and some even completely removed, I no longer needed them.
Your next step is to make a plan to change the way you eat. Because it's such a big change in your life I have found that having a plan to change habits works better than just shooting from the hip.
You may have some food addictions that you will have to work through, and that takes some time. Your body is going to need some time to adjust to your new way of eating and you need some time to learn how to cook differently, you may experience some cleansing symptoms as well.
A gradual change in your diet may work best for you or maybe you like the "cold turkey" approach or something in between.
I suggest you start with the gradual change and go from there.
This took my wife and me about 3 to 4 months to do and every time I dropped something from my diet I said to myself, "I am healthier today than I was yesterday" reminding myself that this is a walk and not a run.
At the very start, as these months went by, I immersed myself in learning how to cook healthy and I started to collect Plant-Based recipes, keeping the ones I liked and Garbage-canning the ones I didn’t. Here is the link to the recipe resources page I put together.
Pro Tip: Get the recipe app "Paprika". It's the easiest way to collect and organize recipes. The best thing about this app is it will download any recipe off of any website by just browsing to the recipe using the Paprika built-in browser and tapping the download button and magically the recipe is downloaded into Paprika. (It does cost you a one-time fee, but is WELL worth it!)
As you drop these foods from your diet you will start to see changes in your body. Your body will begin to change itself.
